Story / Ghent

Built around the season.

SAISON is a small restaurant organised around one idea: that the best cooking mostly happens before the cook gets involved. Everything else — the fire, the room, the wine — is there to get out of its way.

Chef / Founder

Mara De Wilde

After kitchens in Copenhagen, Antwerp and Lyon, Mara returned to Belgium to build a restaurant around local produce and direct cooking.

She keeps the menu short and the fire honest. Most of her work is deciding what not to do to a good carrot — and then having the nerve to leave it there.

Philosophy

Produce first.Everything else follows.

Growers

Names on the delivery notes.

A hand inspecting crisp lettuce at a market stall
Checking leaves at the market, before anything is ordered

We visit every grower before we buy from them, and again each season. It is slower than a catalogue and a lot more interesting. They tell us what is coming; we write the menu around it.

Raw-milk rind, West Flanders

Fire

One hearth. No shortcuts.

The fire is lit at half past five and tended all evening. Duck rests over the embers; leeks go in whole and come out soft and black; the sweetest things get a little apple wood.

Wood
Oak, beech, apple
To coals
About ninety minutes
Service
Embers, not flames
A wide steel pan resting above glowing charcoal and grey ash
The grill, ten minutes before the doors open
A cook’s hand tipping a pan, flames leaping from it
Tattooed hands placing a garnish with tweezers on a plate
Plating is the quietest ten seconds of the evening

Fermentation

The cold room.

Downstairs, beetroot becomes kvass, cabbage becomes something sharp, and a crate of walnuts becomes next February’s dessert. Ferments are how a restaurant that cooks by the season keeps a little of every season.

Rows of large clay fermentation jars along a dim cellar
Clay jars, left alone
Jars of fermented red cabbage with swing-top lids
Red cabbage, week two
A glass jar of vegetables bubbling in a brown brine

The room

32 seats. One room.

A small dining room built around an open kitchen and a long service counter. Dark wood, linen, stainless steel and a lot of candles. You can watch the fire from almost every seat.
